Eating Principles in Ninh Thuan

  1. Don't eat in tourist areas: High prices, inconsistent quality.
  2. Ask locals: Good restaurants often don't have big signs.
  3. Eat breakfast early (6-7am): Many places sold out before 9am.

1. Bánh căn (but at the right place)

Bánh căn in Phan Rang is different from Phan Thiết. Smaller, eaten with tamarind fish sauce, pork, quail eggs.

Where?

  • Bánh căn Cô Ba (near Phan Rang market, open 6-9am)
  • Don't eat at beachfront restaurants (touristy, expensive)

Price: $1.2-2/serving

2. Bánh ít lá gai (Ramie leaf cake)

Cake wrapped in ramie leaves (black color), filled with coconut, mung bean or pork. Ninh Thuan specialty, not found elsewhere.

Where?

  • Tấn Tài Market (early morning, 5-8am)
  • Or buy at cake shops on Thống Nhất street

Price: $0.4-0.6/piece

3. Cá mai hot pot (Grouper hot pot)

Cá mai (grouper) is Ninh Thuan specialty. Sweet, firm meat, perfect for hot pot.

Common Mistakes

  • Ordering "fresh live fish" → restaurant gives frozen fish, high price
  • Group of >4 people but order small pot → not enough food

5. Bò né Phan Rang (Phan Rang sizzling beef)

Bò né in Phan Rang has added pate, Vietnamese sausage, and distinctive tomato sauce.

  • Bò né Anh Tú (Thống Nhất street)
  • Breakfast (6-10am)

6. Seafood (if you know how to choose)

Ninh Thuan has fresh seafood, but easy to get overcharged if you don't know prices.

Rules

  • Don't eat seafood at beachfront tourist areas
  • Ask price before ordering
  • Compare market prices:
    • Lobster: $32-48/kg (seasonal)
    • Crab: $8-14/kg
    • Fish: $6-12/kg

  • Ninh Chu market (buy fresh, ask restaurant to cook, fee $2-4)

7. Tamarind fish sauce

Not a dish, but Ninh Thuan's signature dipping sauce. Sweet and sour, made from tamarind, fish sauce, garlic, chili.

Try with bánh căn, grilled spring rolls, or bánh hỏi.

Common Mistakes When Eating in Ninh Thuan

  1. Eating dinner too late (after 8pm): Many restaurants close early or run out of food.

  2. Not asking price first: Especially for seafood. Ask specific price (unit price + weight).

  3. Avoid restaurants with English menus: Usually touristy, high prices, average quality.

  4. Large group but ordering little: Many Ninh Thuan dishes serve in small portions. If 4-5 people, order double the quantity.

Summary

Ninh Thuan is not a food paradise like Da Nang or Saigon, but has distinctive dishes worth trying.
